Put in work today, two pies and some Irish brown bread. #baking

It shrinks up a LOT during the blind bake. Filling went fine, but man the edges are ugly. #baking
I’ve never been able to figure out pie dough. I think I may have not been rolling it thin enough. This time I used way more flour than I could expect and rolled way thinner than I expect and it might be the way to go. Pumpkin pie incoming. #baking

I’m going to post something super humiliating. I’ve made Apple Pie a bunch of times but I tried to up my game on a few ways. First, a combo of Granny Smith and Honey Crisp apples (success.) Second, melting the mix of sugar-water to caramel and cooking apple slice into it to get more filling into the pie (success). Using ‘fraisage’ to make the pastry to make it flakier (I THINK it worked better?!)

With the time between work web-calls I had no room. I had to put lattice on while it was still kinda warm. It melted and the grid was broken, so I decided to try a Zelda Tri-Force. HUGE fail, so I went for geometric patterns and then I saw a big ass cross. It’s not a religious pie. I didn’t know what to do so I kept it all and figured I’d tell my friends the whole situation. #baking

Tried a new way of cutting butter into biscuits - put buttermilk in the freezer, melt the butter, when you combine them they coagulate and you mix that into the dough. It worked and the ‘sweet style’ biscuits with jam were delicious. #baking

Put walnuts in my chocolate chip cookies because Wife’s nephews like them, but now we’re not going because she’s got Covid. But the nuts are still there in DIRECT DEFIANCE OF GOD. #baking
