@richcampbell if you haven't tried High Wire Distilling's Jimmy Red Bourbon (not easy to get, but not too pricey), you'll want to give it a shot. They helped save a rare variety of corn to make it, and it packs a wallop both in terms of flavor and alcohol content (in a good way).
