I'm fascinated by the idea of "gasoline superusers" converted to EVs.

"By contrast, the top 10 percent of motorists in the United States drive an average of about 40,200 miles per year and account for roughly one-third of the nation’s gasoline use. Persuading more of these “gasoline superusers” to go electric would lead to a much faster reduction in emissions, the Coltura report found."

We need agendas set aside (and greenwashing called out) as we determine whether these eco-friendly practices actually deliver on reducing climate impacts. Having legitimate alternatives for non-vegans, including eating less of better options, might be helpful in getting more people to go along.

I’m loving many of the recipes from Anna Jones’s book One Pot, Pan, Planet. I primarily eat plant-based but get in a rut preparing the same recipes over and over.
If you’re looking to add more plant-based and sustainable dishes to your diet, this book would be a good introduction.
