Christmas baking has commenced!

This is a Brettanomyces custersianus cell, stained with wheat germ agglutinin (WGA). WGA binds to the carbohydrate N-acetyl-D-glucosamine, which on yeast is found on bud scars – a region of permanently altered cell wall left behind after cell division. This is a 3D reconstruction of a single cell with 8 scars. Each was a “neck” that connected the mother to daughter cell, through which replicated DNA and other material would be passed from mother to daughter.
