Like many of the ways that we live now, the idea of three meals a day has its roots in the Industrial Revolution:

—breakfast: a brief meal eaten before the working morning
—lunch: light but fortifying to be wolfed down quickly when breaks weren't paid
—dinner: a final sitting when everybody had finished

Rigid industry-dictated slots for eating created opportunities for tycoons to mould our tastes and behaviors.
