This is only possible, I figure, because #iphones are absolutely shit at security and are letting the hotel impregnate the phone with many and various pieces of corporate malware.

This DID NOT work! I think the enshittified captive wifi somehow stops at my phone's hotspot, so my computer has actually been drawing on my data plan, and Canadian data plans are *CRAP*. I just got a text from my provider that I'm 50% through my data two weeks in, and that's never happened before.
So: this hack is not viable.
Sigh.
