Confession: I do not cover radicchio to turn it red. It’s just too much fuss and maintenance. Radicchio di Treviso is a leafy green that is so bitter, the insects and slugs leave it alone. It’s a well-behaved companion plant and you can do cut and come again method for continuous harvests.

I cook it with other greens to lessen the bitterness.

Anyway, here is what it looks like when you don’t cover it. There is still some red but very splotched.

@jblue I imagine a few leaves ripped or cut into roughly thirds would bring a zing to a salad without needing to cook it at all.
