Back when we were involved with our local gardeners'market, one of my jobs was "weight inspector". Everyone had to have 40# on each leg securely attached for this exact reason.
@Dougfir I think each of mine weigh in at just under 40. I had them custom made. 2" square solid steel rods, 36" long, with a loop welded on top. I tie the loop to my tent top and use bungees to secure them to each leg.

Steel is compact and durable. One athletic vendor used kettlebells. 5 gallon jugs of water work well if you have the space to carry them.
@Dougfir A very seasoned art show friend of mine had a set of these so I just had a set made. They don't roll around in transit and take up very little space. They also don't look as tacky as 5 gallon jugs of water in the corners of the tent.

And when the time comes that 40# is too much, you can get them cut in half with a new handle added to make them more manageable.
@Dougfir A better solution would be to just stop doing art shows. I'm nearly at that point now. This weekend will determine whether I back out of the other two shows I have scheduled for this season. I don't think I'm sitting in this booth for three days in a row is a good use of my limited time. 🤷🏼‍♀️
