There's a local #Vietnamese restaurant and they do a really good #vegan soup with pho and tofu. The broth is a mushroom broth.

I've looked at recipes and the soup base usually involves several hours simmering to get maximum flavour.

I doubt the restaurant bothers to make their own vegan soup base. They might do, but I assume they use a stock.

I've found a mushroom stock by Lee Kum Lee that works very well and I now make a pretty good pho soup. It might be a chest's method but it still tastes really good.
