πŸ„β€πŸŸ« and leeks were on offer, so there was leek- shroom- miso- pasta for lunch. 30’ cooking, easy two days eating.
Modified NYT recipe:
Finely cut 2 medium leeks, halve or quarter 750g button or oyster πŸ„β€πŸŸ«.
Fry leeks with some oil, add πŸ„β€πŸŸ« , lots πŸ§„ , stir until brown.
Cook 500g (short spelt) pasta al dente -3 minutes.
Join pasta to leekshrooms, πŸ§‚ , pepper, vinegar, grated 🌱 parm, 2tsp miso and dried πŸ… to taste. Add a little πŸ’§ if needed. Cook until yay!
Just found out what this one was missing- hot sauce! Happened to have (forgotten) some fermented habanero- mango sauce in the fridge and my, has it improved since last year. Fermentation takes away a lot of the heat, and it’s sooo good. Rubbed my eye after splashing some on my finger, and I didn’t even stay crying. That’s the friendliness of lactobacillus for you.
