Modified NYT recipe:
Finely cut 2 medium leeks, halve or quarter 750g button or oyster πβπ«.
Fry leeks with some oil, add πβπ« , lots π§ , stir until brown.
Cook 500g (short spelt) pasta al dente -3 minutes.
Join pasta to leekshrooms, π§ , pepper, vinegar, grated π± parm, 2tsp miso and dried π to taste. Add a little π§ if needed. Cook until yay!
