tortilla chips
oaxaca cheese (mozerella will do otherwise)
2-3 jalaps
a can of refried beans
an onion
a lime
arrange chips on quarter sheet pan (or whatevs fits)
slice jalaps thin
dice onion
open bean can, sautee a little (to make em pourable. add jalaps/onion here if you want)
pour beans onto chips
jalaps/onion on top of beans
shredded cheese on top of that
broiler on medium for 7min or bake at 350 for 10-15 min or til cheese makes you drool
serve with fresh guac

guac:
4 avos, ripe (you should be worried they are overripe)
1 small/med tomate (diced finely)
half a small/med onion (also microencubinated)
1-2 jalaps (diced is good, rings are fun)
garlic (whole or from a tube, whatevs)
fresh cracked pepper
seasalt
limejuice
hot stuff (the good sriracha, nopesauce, dealers choice)
oil blend, approx 1-2 tbsp (i do walnut/garlic/toasted sesame/white truffle)
shlorp it all together with a spoon
