@mike There are lots of recipes online - it is a favourite street food. Each recipe has it's own twist.
This one looks good but add cooked beetroot to it. Australian tinned beetroot would work well, or some supermarkets sell vacuum packed cooked beets, if you don't want to cook your own. I don't add cheese, but feel free. https://www.honeywhatscooking.com/bombay-grilled-sandwich/
You can buy chaat masala and coriander chutney in any Indian grocery.
I'll also send you a recipe that I have that is approx similar and also relatively easy to make.
Indian sandwiches can take as much work as a meal by the time you grind your spice mixes and make your chutney spread(s) 😆

My absolute favorite thing in India. Deceptively simple, almost impossible to find a good one outside India (at least for me - I have spent 5 years looking for a good one in the Chicago area to no avail)....
We do! I feel like it is best at home now. Saves me from being disappointed. Best one I have had on this trip is one my BIL made.
IMO a good Bombay Sandwich has four things:
1) Vegetables that are cut just right - not too thick, not too thin. This to me is what makes it hard to find a good one.
2) Usually has three slices of bread to give it more structure. Not necessary but helpful.
3) A good green chutney spread.
4) A lot of shreaded cheese. In India they often use Amul cheese, a processed cheddar that is tangy and salty.

@LifeTimeCooking Interesting - I was just thinking most of the beetroot I see in the US is pickled. Wonder how that would go on there...
@LifeTimeCooking I'm fairly sure I can find fresh beetroot at the store and cook it (though that seems like a lot of effort?) I'm less sure about readily-available pre-cooked. I'll have to look! I've honestly never seen it pre-packaged as anything other than vinegar pickled.
That is terrible! I haven't seen that but notice quality can differ. On this trip, we went to Indian Coffee House in Delhi and ordered their killer aloo sandwich and it was different each time we ordered it.
The best Bombay Sandwich I have had was from the Haji Ali Juice Center in Mumbai. It was a transcendental experience. I had the same one from Haji Ali in Muscat and it was...not.

I feel like things have become a bit too commercialized and commodified. You have to really look for quality things. Sometimes you just find it accidently. We stumbled upon a Banarsi place called Bati Choka in Noida this trip and it some of the best food we have had in India. I plan on posting some photos here or on my Pixelfed soon when I have the time.
