@Jeff Chocolate chip cookies are so comforting. I let the dough sit overnight in the fridge. It's hard to wait that long before baking but it's worth it. #food

@Heidiknits That makes a lot of sense. I will give that a go next time, maybe mix up a batch tonight to bake in the morning.

Out of curiosity, do you have any cookie recommendations that may be better for last minute, kids are in bed and I want a cookie, cookie?

@Jeff If I store them on the counter, they're gone in 24 hours. Started squirreling a dozen away in the freezer for me to sneak one or two at teatime. Pop them in the microwave when I want them. You could also use a scooper to portion, set them on a baking tray for 15-20 minutes in the freezer. Once they're hard you can store them in a ziplock bag in the freezer. When you want one, bake them like normal, but add a minute or two. (Or let them defrost for a bit on the counter, then bake.) #food

@Heidiknits I do that with my Ginger Molasses Cookies, make a batch of 60 and freeze most in dozen portions. I may just have to pick a rainy weekend and do the same with the chocolate chip. Make a BIG batch and freeze the dough.

@Jeff Yours are puffier than my ginger molasses cookies. The photo shows a side view of a sandwich cookie made with the ginger molasses cookie recipe I use. They're large, chewy cookies and always get good reviews. (The center is a marshmallow buttercream frosting. Delicious! Now I'm craving cookies...)
