The tip of waiting until after cooking to add salt is new to me.

Regarding the shelf life of beans, today I ate some #mayocoba #beans that were about five years old, preserved in no special way, stored in their original bag, and they taste excellent with a good texture. Some beans store well for a long time.

@Earl Some beans do. Don't try something like that with chickpeas, though. I did and the results weren't good.
