Tucci Pan Review

Stanley Tucci has a set of cookware named after him that GreenPan sells. I've got these two pans: I forget where they came from exactly, some silent auction or something, but I unboxed and started using them about 8 months ago. I was so hyped the first few months! Ultra extremely non-stick Washing them with a soft sponge is nearly effortless because of how non-stick they are.

By now, I'm wondering if the only way to preserve non-stick pans is through oil-free cooking, which strikes me as limiting.

@chriscoyier I had a set of green pans as well. Not their top “pro” line, but one of the fancier coating options they offered circa 2020.

Mine also lasted about 1 year even with proper care. Overall, I don’t think I’d buy them again.

@chriscoyier my cast irons remind me I should be spending time in the gym. I recently learned that non stick pans should be replaced regularly. I’ve given up on them.

@chriscoyier you should look into nitrided carbon steel pans. I've got one pan I'm just about ready to replace with one when it's nonstick starts to crack.

I personally consider coated nonstick pans as "disposable" so I try to not pay much for them. I like the tiny Oxo one for eggs and omelettes. Traditional, but cheap, so I don't feel bad when it eventually dies

@chriscoyier I recommend giving carbon steel and stainless steel a try. Carbon steel will be lighter than cast iron with many of the same benefits. Stainless has a bit of a learning curve but it is more versatile in that it can handle reactive ingredients.
@chriscoyier hasn’t been a year yet but we’ve been pretty happy with our place: https://fromourplace.com/products/titanium-always-pan-pro

@jed I can’t explain it but I trust your pan taste with my life
@chriscoyier must be our mutual love of ZIMA.
@chriscoyier I had a GreenPan too. It was amazing for a few months, but degraded quickly. Like you I found the cleaning/reconditioning process doesn't do much. It became the stickiest pan I've ever had. An amazing character arc, really.
@toddz EXACTLY. What a fall from grace.

@chriscoyier from my understanding that's the nature of non-stick pans?

Not sure if you are looking for recommendations, but every 3-4 years I just buy these All-Clad non-stick. The coating is pretty durable, the pan has some weight to it that I personally like, and they retain their heat well. My biggest nit is that I find their handles to be uncomfortable. They used to be $60 for the set, but it seems those days are over. 😅

@sel I think you’re right that’s just the deal. I guess I bristle that it’s like secret knowledge you just need to come across. They can’t just be honest on their website because if they were they’d sell zero pans.
