@Viss Clever. Placed an order for some v7 earlier this week. Gifting one to a guy who works at my pub quiz bar who had half his favorite bottle of hot sauce wasted by a patron who wanted to "try" it.

I experienced a similar situation when I took some spiked v6 to a friend's house for myself and a buddy asked to try some. Before I could say two words he'd squirted about a quarter-sized dollop on his plate and dipped some beef into it.

At least I got to watch him sweat. He likes hot sauce and he's no wimp about it, but he was simply not prepared. He just kept saying "Toby, that's some shit. That's "some* *shit*!!!" over and over.

@xenotrope i am not southern AT ALL, but i routinely pull out the phrase "a little dab'll do ya". its meant to be strong. its meant to be potent! the stuff was derived from the need to travel with flavor, and 2oz bottles make it through tsa >:D

i also learned fairly recently that adam savage travels with flavored salts! so much the same, except with me its saucey business

@Viss As I recall it, this guy had a personal bottle of his favorite Scorpion pepper hot sauce and he'd let people use it at the place where he worked. He told my friend and me "I don't mind if you guys use it because you understand how to handle it, but I came into work one day and half of it was gone," so we can surmise that somebody asked for hot sauce for their stupid nachos or something, somebody said "Here, try this," and macho being macho, dude must've slathered his food with it and ruined everything everywhere all at once.

I'm too scared to travel with Nopesauce. I don't know how well it handles unrefrigerated conditions.

@xenotrope the last batch had active ferment in it that i killed via pressure cooker. this batch does not have any active ferment in it, so i wager its 100% fine until you open it, then its 'refrigerate after opening'. there is zero risk of explosions, but small risk of "it may eventually catch a mold or a yeast if unrefrigerated". i didnt put a test bottle on the counter to just 'fester' for a week like i have previously - so far zero reported problems from other customers

@Viss I always buy a bottle of Nopesauce for a friend of mine. He complained that a bottle of v5 got moldy very quickly, I'll have to ask him if he refrigerated it or not. I noticed some gunk in the nozzle of my same batch of v5 a long, long time later, but I kept mine in the fridge.

This is a problem whenever dealing with homemade concoctions. If you don't add ascorbic acid or xantham gum or palm kernel oil like everything seems to have, it loses shelf life, but it also makes every batch a use it or lose it thing, and that's OK by me.

@xenotrope so this batch has apple cider vinegar in, all of the others did, but there are zero "chemicals". no stabilizers, no preservatives.
@Viss That's what makes it good. Shelf-stable is fine for Sriracha and such. I like it when it's homemade. Mom didn't put stabilizers in her apple pie, either.

@Viss Talked to my friend. He says he didn't refrigerate his v5 Nopesauce that went moldy. Explains a lot. Kids these days.
