I've made a big salad, a potato salad, buns and coleslaw. About to embark on a beanburger adventure when youngest says she absolutely will not eat that, and I quote 'beans should never be a burger'. So I must now also make her baked beans, which she says is 'the best thing I make', which I think is very rude.

I'm with her. Hard pass on beans ... but I love lentils and mushrooms in my veggie burgers. I also used mashed potato flakes instead of bread crumbs as the binder.

I was vegan at one time but it's just didn't work for me. Too many allergies to vegan ingredients (Soy anything, nutritional yeast, and I hate chick peas). Those burgers were the one of the recipes I created that I kept and ate regularly. Now on keto and 90% of the ingredient aren't keto friendly. I do miss lentils A LOT!
