I found a way to cheat the omelette problem.

If you place a lid on top of the pan, it steams the top of the omelette at the same time.

You might end up with a slightly brown bottom (ooeerr) but the top will be nice a fluffy.

otherwise, cook it for a couple of minutes, then pop it under the grill.

But I like mine to have a slight crunch to the outer part and be soft and fluffy in the middle.

I generally prefer to make my scramblish eggs fluffy, but if you mix them
too fluffy, they don't yield well to the manipulation necessary to make an omelet. So, it's always this fine line between too fluffy and too flat.
