35g sugar
8 g Salt
1 egg
Pour into the mixing bowl of the kitchen machine
200 ml water
50 ml milk
80g butter or margarine
Warm up so that it is lukewarm, e.g. 1.5 minutes at 600 W in the microwave
Also add to the mixing bowl.
500g wheat flour without raising agents such as yeast. It should be baking strong with a slightly higher mineral content, such as that used for bread. In Germany 550 flour in Austria W700

Mix and add to the other ingredients in the mixing bowl.
Knead for about 10 minutes until it is a smooth dough. Cover and let rise for 60 minutes. Make 8 equal parts of the dough (approx. 116 g) or more and smaller ones and 'grind' into balls (search 'Teig schleifen' on Youtube) . Use a bit flour if the dough sticks. Then use a little flour to press the balls into a disc with the palm of your hand and put them on baking paper.

Let rise for another 45 minutes. If you want sesame on the buns, mix 2 tablespoons of milk with an egg yolk and sesame and brush the buns with it before baking.
Preheat the oven to 250°C with a tray on the middle and a heatable bowl of water on the bottom so that it is hot when the 45 minutes are over. Place the buns on the baking tray in the oven. To do this, I place them on a thin board with the baking paper and put them in the oven.

Reduce the temperature to 200° C and bake for c.a. 16 minutes. Let cool on a rack.
It is a game changer compared to the one you can buy.
