I'm not a veterinarian or a cat nutritionist, so please take my words with a grain of salt, but as far as I know, cats are absolute carnivores and any attempt to feed them plants can be dangerous for them. Of course, I don't rule out some breakthrough in the production of vegan cat food that I may not know about, but if you haven't done it yet - please talk to your vet about feeding your cat. I hope you don't get me wrong - I believe that you care first and foremost about the welfare of your pet, and the photos don't suggest that the cat is unwell, but sometimes it's worth asking specialists, because not everything can be seen at first glance, and some problems only appear over time…
