Started a batch of #yoghurt at lunchtime today, and it could use a few more hours.

Guess I'll visit it during the night when I get up at some point. Probably can load it all into the fridge then.

Checked at 1:30am and yoghurt had done its work fine. Put half of it into fridge then, but let the rest cool on the kitchen counter 'til morning. Both groups are nicely firm, so seems there's no difference – will check closer at breakfast and let that guide me if I really need to do the usual middle-of-the-night refrigeration I often end up doing.

Expecting the culture would be fine without immed chill after setting. Surely it would just continue to work with remaining diminished energy.

I used to just use a slightly-warm oven, with a light bulb left on to make my yoghurt, but we got a countertop plug-in unit a few yrs ago which is much easier to control. It's worth it for the convenience and it's nicely compact to stow in a drawer.

Was using a dedicated yogurt maker, but it never worked well for me. What did work fine was Instant Pot on yogurt mode. Stopped doing it after a while because I wasn't eating a lot of yogurt, never picked it back up because yogurt is nearly as expensive to make as to buy.
@llanion yeah there's not much financial benefit, esp if the yoghurt goes on special. Sometimes it can be hard to find the natural type in the store your shopping at, without gelatine or other additives, but that's the only downside.
