I'm currently struggling with coffee problems.

To wit: I love supporting local roasters. But I'm super unsatisfied with what I'm getting, even though the beans are very high quality.

Most of the time, I'm getting overly-fruited, brown, relatively weak coffee.

This is happening almost regardless of from where beans are sourced and isn't a blend prob, since I buy only single origin.

I like deep, dark coffee; the darker and stronger, the better. And I'm just not getting that, regardless of brewing method and coffee quality.

The best coffee I brew is just basic ground Lavazza. I love Lavazza!

But it's strange to me that I get more satisfying brews from pre-ground bag coffee than single-origin beans curated and roasted fresh.

@profgoldberg It seems like the lighter and fruity/floral beans/roasts are currently more popular.

With lighter roasts you're just not going to get the deeper notes unless its in a blend.

What brew methods are you using? There are some tweaks you can do there to amp it up. But, at some point, you're limited to the flavors that exist in the beans/roasts you're using.

Also, if you *like* Lavazza, use it. "Good coffee" is highly subjective. Drink what you like

@x1101 Yup, this is the message I'm hearing -- currently lighter roasts are *in" (blech, do not like).

I use a variety of brewing methods, but my favorite is moka pot, which consistently delivers deep, rich, warm brews with #Lavazza. #coffee

@profgoldberg I've come to like the light roasts myself, but I totally get not vibing with a specific flavor profile.

I'll go back to what I said. If Lavazza is what you like, drink it.

@profgoldberg @x1101 I agree, drink what you enjoy. Lighter roasts are really good for cold brew, but a moka pot deserves something darker and richer.

My issue is usually with sourness. For some reason a lot of fancy coffee tastes sour to me. But of course if I say "can I have a bag of your least sour coffee" they say "none of our coffee is sour". Which is why I keep buying Lavazza or one of a couple other mass produced brands

@profgoldberg We are 95% moka pot here and use beans from Equal Exchange. They have lots of organic dark roast choices. We get 2 5-pound bags to make it cheaper. Oh, and they're a worker co-op, and they practice an "authentic Fair Trade" business model.

@profgoldberg depending how set you are on local-to-you vs generally small & independent, Pegasus Coffee on Bainbridge Island, WA makes my favorite coffees of all time (love the Italian roast). I personally drink a ton of Lavazza, so I suspect our tastes are similar.
