@Ddiamond before exploring accounts you can start to explore communities. If you are interested in EU politics, for example, the mastodon instance of EU institutions is on https://social.network.europa.eu/
Then you can add /directory or /explore (for older versions) to the main link of the instance to browse for profiles worth to follow:
https://social.network.europa.eu/directory
You can start from the local profiles (see screenshot) and then explore the "known fediverse" visible from that server.
