@wisbr #fermentation is our favorite preservation process. For example a person can ferment small batches. For example pints or quarts in ball jars. Fermenting a blend of peppers until it’s a the consistency of a thick spread is a two ingredient ferment. Peppers and salt. Adding garlic to that is a three ingredient ferment. The recipes in Kirsten Shockey’s books have been wonderful. Examples are Rempah, Sambal, and Adzika sauces. The internet will help you avoid mold.
