@carowe there are a lot of veggies in Indian food already, I can see where it would be pretty adaptable.
@lauralmcnabb much of it is already vegetarian and has been for thousands of years. Subbing in pressed tofu or seitan or shrooms here and there and using coconut cream in lieu of cream cream usually works well.
@carowe I used coconut milk for this dish, it was quite nice.
