A question: do vegans eat truffle? They aren't a product or byproduct, but animal labour is generally used to source them.

You are correct. The consensus is that it is not vegan because of the animal labour.
Veganism at its core is about abstaining from using animal products AND avoiding making animals a commodity.

People may have different levels of commitment though. So not everyone will be as strict about it as the definition specifies.

@Fredrio brilliant! Thank you - it was just an idea that stuck me earlier and I couldn't think of any other example that felt comparable. I suppose the closest would be honey, which I know isn't considered vegan.
@SRotzschThomas @Fredrio Honey, to me, is of a different level, since bees use it for their #offspring. No #honey = no offspring. #Truffles don’t have that equation. Truffles are part of the foraging diet of boars. They don’t need them to survive. And we don’t keep boars to cultivate truffles. But I agree that using animals for our own palatal pleasure is tricky for #vegans.
@SRotzschThomas @Fredrio Another example would be #figs. A certain wasp species uses them to lay their eggs… That’s why figs are considered by some not to be #vegan
