@sarahmayg The Greeks have been doing a lot of that. The first wave tended to be off of Santorini. Of course, the Greeks are always close to the sea! They had some good arguments as to why it protected the wine better and kept it fresher. Given the rationale for doing it, the final answer as to what it accomplishes would only, one would think, be clear after some 10 years of aging or so. The differences haven't been as dramatic when young, but differences tend to get greater with age. #wine #winesofgreece
