The miso was a little over a year old today. Made a bit of broth to taste it. divided it in to jars for sharing and storage. Enjoyed a few glasses of pink dragon fruit melomel. pizza dough and sourdough rye proofed on the counter. A failed first attempt at mozzarella will live out it's numbered days as paneer instead. Time for sleep.
