Received in the mail, #stonebrewing has shared with us their newest IPA, Zimology. Brewed with Zumo & Mosaic hops, the result is a beer with perceived notes of pine, lime and grapefruit citrus, and some grassiness. Accented with sweet caramel, the overall balance towards citrus and pine bitterness.

Out of the can, Zimology produces a hefty amount of off-white head, resting on a pool of orange clarity. Receding, there remains a ridgeline of lacing inside the glass.
Swirling and sniffing, one recalls notes of subtle pine, tropical and lime citrus, and some grassiness.
Sipping, we recover many of the aromatic notes along with grapefruit citrus, and some resinous pine, accented by caramel sweetness. Overall, Zimology has a medium mouthfeel, noticeable alcoholic warmth and a lingering bitterness insulated by a stickiness.

Call it the Laphroaig of beers. As unique brews continue to fall to generics and alcoholic concoctions of the chemistry lab, it's good to see the gold standard of “in your face” brewing is still with us, even if its creator is not. Rich, malty, intense citrus and pine hoppy, very complex, and very assertive. The 100 IBU seems conservative. Not “drinkable,” and in this case that's a good thing. Getting hard to find, and only in loose 22oz cans that typically sell for $4.50 to $6 each.
