From my experience, major banks and CC issuers in the US will initially charge in yen and convert to USD on your statement, based on the daily rate (see 1st screenshot).

Also some online Japanese merchants allow you to choose USD at checkout (2nd screenshot). In many cases your bank will offer slightly better rates, which can make a difference for larger purchases. Hope this helps.✌🏿
