Thanks to all - for the solid advice and encouragement.
I've now started today using an old whetstone with the existing knives. That should help to hone my sharpening skills (that was Arne's fault!) and get us used to routine handling of sharper blades.
Any fancy new purchases are hereby deferred.

Poor quality whetstones have many disadvantages. One of them often seems to be that they only remove heavy metal from a blade. If you grind several kitchen knives in a row on it, you should not use your finger as a spacer to the stone to maintain the angle. The stone is wet and cold, you won't notice if your finger is also being "sharpened" and at some point you'll just wonder what brown-reddish streaks suddenly appear to be coming out of the water stone. 🙄

I got my water stones out a couple of weeks ago to tune up my knife and then a straight razor. After dialing in the bevel on the straight razor and getting a lot of experience with these stones, I went back and took another pass at the knife.

I've never had a kitchen knife so sharp before. Apparently I handle the bevel a lot? I've accidentally cut myself twice today.
