Just bought a mess of roasted New Mexico green chilis, watched them being roasted, in Flagstaff. What a treat we have this Fall. A different operation than the old days, with a very nice gas jet smoker, 8 jets I think, took about 3 minutes. The aroma is wafting over me from the box right now.
