Around 25 years ago Gordon Reid started publishing a series of articles called Synth Secrets which is available online in many forms including PDF. It covers the science and application of audio synthesis. I had a hard copy printed and it is completely awesome. I just read about harmonic phase shifting in analog filters and it made sense. The book covers a wide range of techniques beyond just subtractive synthesis. Lots of lovely diagrams to explain things. Recommended.
