Dinner tonight. Homemade katsu curry. Baked, gluten free chicken katsu (because fuck frying and also cooking for a wheat-allergic friend).
Definitely one of my favorite dishes
Family dinner tonight: homemade lemongrass chicken banh mi! Made the do chua/vietnamese pickles myself, too. (at least a quick version. They turned out ok even after a few hours, but they’ll get even better in a few days)
Also my first time cooking with lemongrass and omg it’s so hard to cut how is that stuff so tough.
I had to mince it, too. My hands were hurting by the end lol (I need to get my knives sharpened heh)
Dinner for family tonight: arroz con gandules, pollo guisado with carrots and kabocha (I didn’t have potato, unfortunately), and a side of fresh avocado with a pinch of salt
Finally remembered that I have hing/asafoetida in my spice drawer that I bought a while back and added it to tonight’s chicken korma and it made a HUGE difference. Like wow. I felt like something was missing before and it was absolutely this
Oven-roasted pesto chicken with homemade cashew (vegan) pesto made with super freshly harvested basil from the garden, pan fried purple green beans from our traditional three sisters garden (we had the corn a little while back) with some salt, pepper, garlic and onion powder and olive oil, and a smol side salad.
And yes it was amazing.
The beans turned green when I cooked them though. They were super purple before.
Quick, lazy dinner. Looks amazing for something that took like 5 minutes or less of actual effort (the rest was waiting). Trying out adobo on the salmon and of course it’s amazing. My house smells so good rn.
