Then I realized you didn't answer the main question: How do you make freeze-dried food into something you'd use in a normal recipe? I get it: eggs. Yes. My great-aunt & uncle lived through WWII in the UK. They rec'd freeze-dried eggs from the US (a diff process slightly) but they told us they LIVED for the day they got their monthly rations! So there's that...but other recipes?

Has anyone here used a Martin Christ freeze dryer? Are they reliable/good?
We've always gone with Labconco, but procurement are keen for us to consider Martin Christ. I'm a bit wary to try an unknown brand, seeing that this is an $80K+ purchase.
