Woman thought to be behind the Eccles cake commemorated with plaque

The descendants of a famous 18th century cook and home-maker have seen her commemorated in Manchester history. A plaque honouring the contribution of Elizabeth Raffald, author of Manchester's first trade directory and influential cookery book, The Experienced English Housekeeper, has been erected in the city centre – after eight years of campaigning by relatives.
