This morning we had the wonderful opportunity to go on a sunrise tour of Xochimilco, in the south of Mexico City, to explore the floating gardens that have powered Indigenous agriculture here for millenia.

Not only was it beautiful, we got to taste the produce. The canal regeneration project, in its current modern revived form, supplies the best restaurants in Mexico City and also local families through CSA-type boxes.

My second time making chapines and I think they came out pretty good. Only time will tell. Let's see what sprouts! A #chapín is the way we germinate #seed (and sometimes #cuttings) in the #chinampa.
Chapines were invented along with other chinampa practices by the #Xochimilca well before the arrival of the Spanish and even the Mexica. Basically you dredge mud from the canal and dump it into a depression in the earth. The next day you cut it into squares, make dimples with your fingers, drop seeds, abd cover with dirt and manure.
