Mistakes happen  I also gladly post about them

So last week I told you about that garlic bread community event. I tried to a thing that I don't do often ― bulk fermentation with more than one dough. There were two problems though: My bowl was too small, and I used not enough sourdough starter / preferment. I only solved the first problem. Thus, both doughs that I made were underproofed. Loaf 1 (which also was slightly underbaked) was meant for a gluten girlfriend, but I eventually told her to discard it a few days later (since underproofed & underbaked breads usually don't keep well). The second loaf was for the garlic bread event. We only garlified half of the loaf, which somehow saved it (it was delicious, but a bit hard for garlic bread). I ate the second half as is (or rather, as was).

So today I made the opposite error  I prepared a "mostly white" dough last night, and I forgot to put it into the fridge. So I saved the (severely overproofed) dough by pouring it into the mould and baking it. It'll come out of the oven soon. It looks good, but of course it was to expected that it didn't rise a lot. But it still rose as much as my 100% whole grain breads, and I also expect it to be soft. I guess it probably isn't a complete failure, but I wanted to bake it later...

Attached is a picture of today's loaf.
