Another sunny day, another grill lunch!
Pork and mushroom skewers today.
Today was a pleasant day for grilling up some lunch! I marinated a couple chicken breast in a mix of garlic, ginger, lemon, soy sauce, mirin and sesame oil for about 2 hours and it turned out excellent! My brother and his husband had the chicken with some rice, while I grilled romaine lettuce and had my chicken over that with some balsamic glaze.
The salmon and the rice were excellent and their flavors paired well together. The zucchini got a tad overcooked, but was still quite flavorful. I'm quite happy with the results and it only needed garnish to make it feel like something you'd get at a restaurant.
I love having a grill!

Last night we had BLTs so we could get enough bacon grease for my brother to make Fried Beef Tacos with it tonight. Mmmmmm... I haven't had fried tacos in about a decade. My mom made them occasionally, though using crisco as the frying oil.
The simple joy of trying to lift up one side of the shell of one fresh from the fryer so the cheese you throw in there melts extra good.
I made Aloo Masala Breakfast Burritos for myself this morning and they were quite tasty! Needs a kick of something in the seasoning, but I could see making them again.
"Did you get a haircut? Looks different."
"Yes, it took me a while to determine which one to cut."
Made Jambalaya for Mardi Gras dinner this evening. For my first time making it, and given a few substitutions to make it mild, it turned out pretty good. I know I can do better, though. Unfortunately, it's a very difficult dish to make for one, so I can't make it any spicier than my Mom and BiL can tolerate.
Although, to be fair, I did prepare a nice steak dinner this evening. Ribeyes Pan-Seared to Medium-Rare (for a really nice crust this time, too), Baked Potatoes (it's classic for a reason) and Roasted Veggies (Carrot, Broccoli, Cauliflower, Fennel and Onion, lightly seasoned).
I guess it's a compliment that my family would rather have me cook dinner than go out for Dairy Queen... 🤔
