Mature student, soon finished vernepleier (Norwegian profession, somewhere between social educator, nurse and human rights activist). @anke that sounds like a good twist! I did fry the chickpeas in curry powder, garlic powder and lemon juice, but som fresh lemon juice at the end would probably add some good zing. I love pistachios so will definitely try that! Thanks! 😊

I am not vegan, but my wife and me have decided to try to eat vegan at least twice a week. This is our first go… spicy quinoa and chickpeas with spring onions, parsley, chopped tomatoes, pumpkin seeds and pomegranate. It was super delicious, so need more tips! What is your favourite vegan dish I could try to make? #vegan recipes
