(I'm sure this already has a name and isn't some great revelation. If anyone knows it, let me know and I can bandy it around like I'm posh, 😀 ).

Accidental roux procedure that I'm sticking to:
1. melt *and brown* butter, alone, in pan until first sign of nutty smell / browning;
2. add flour and fry/mix until consistency close to dough;
3. add milk as normal in batches, whisking (cold and stand back!)

ie the difference is browning is done without the flour. Downside is less time to fry off flour taste, upside is richer butter taste and mixture more uniform than a proper roux when you start adding milk, so easier to keep smooth.

@davidallengreen Just finishing Bleak House right now, so that should be an interesting comparison!

@davidallengreen Mansfield Park's one I've not read. I do love her style, so I plod through them improvingly, probably not investing as much attention as I should, but I'll give Mansfield Park one a go next with (slightly) renewed hope!
