@visvak A tragedy in the making. This kind of work has particular usefulness as a teaching tool as well, but academia in India is also in such a compromised and/or impoverished state, I don’t know what resources can be marshalled for such projects. Was crowdfunding just not sustainable?
@Bewickwren Most of the recipes I’ve heard or followed do recommend that long a soak but I was worried the meat would disintegrate if I kept cooking it for another 15-20 minutes which is what the rice needed I think. I learn more with each biryani I make. 🤷🏾‍♀️
