#GlutenFree muffin:
In a medium ceramic bowl or a very large coffee mug mix
1 full egg + 2 yolks
1 tablespoon avocado oil
3 tablespoons sweet potato purree
2 tablespoons tapioca flour
2 tablespoons sorghum flour
1 tablespoon fine psyllium fiber
2-3 teaspoons cinnamon
1 teaspoon ginger
1/2 teaspoon nutmeg
1/2 teaspoon allspice
Large pinch of salt
2-3 teaspoons sweetener of your choice (I used monkfruit)
Microwave about 4 minutes until solid. May appear a little jiggly when hot.
