@letydoesstuff Egusi stew is amazing! I think the recipe I’ve had includes goat and shrimp, but even without the meat the ground Egusi melon seeds have a distinct flavor and texture that works well to offset the very present scotch bonnet pepper. I don’t think we used a peanut base though, as we had plenty of melon seeds to work with.
