Ah! I tried to install Edge on Wine (not Proton) because I needed to check for the WebView component and other stuff.
Turns out once installed, it will prevent Wine server from ever shutting down unless you kill -9 it and all its processes, wineserver -k doesn't work...
Once I uninstalled it and removed all the folders and specifically the install program that was on my Linux folder (!!), wine returned to normal.
Fuck you Windows!
