I think if you want to go hardcore the thrustmaster warthog is still very good.
(Pretty much all thrustmaster stuff is good).
I've also heard good things about the logitech x series (x52, x56)

ie: what technologies are you sure are going to still be around in 20-30 years?

Hardware is a huge issue.
Back in the day you have a parallel port. super easy to use and customize. Today you have USB, which is a mess.
Also modern hardware fails quickly (electrolytic caps and whatnot) and it can be difficult to get modern hardware to run old software.
