@arthurbreur @celesteh I find both paleo and vegan too restrictive for my Weird Food Trauma Issues, but maybe in about a decade something like that will be helpful for me. (I enjoy cooking for other people's particular diets, though.)
@arthurbreur @artsyhonker there will be cornflour (aka corn starch), so it won't be paléo.

@artsyhonker @arthurbreur low gluten crust:

200g spelt flour
50g chestnut flour
100g coconut oil
0.5 tsp salt
3 tsp sugar
cold water

make like you would any shortcrust, starting with about 4 T of cold water.  Rolling it out is somewhat weird, but it works.
