iTunes, man.

Spent a fair amount of time re-ripping CDs with iTunes (Music it's called now) and now all of those files are gone. Nowhere on my computer.

What are people using to rip and manage music on Mac these days? I'd still like them to autosync to my phone if possible.

I know it's not available on your tech ecosystem, but for several years I've used Poweramp to manage my ripped and purchased digital music. One of the best features: it only supports stored files, nothing else. No streaming, no music service, just a local music manager dedicated to sound quality.

All my CDs are in FLAC, stored on a micro SD card in my phone. It just works.

For many years, Chromebooks have supported Android apps, so I have the same setup on my laptop. Not that a dedicated machine is the best idea, but likely v. cheap used ones can be had.
