Wild yeast Elderflower Wit. I have this on tap as well, but they always taste a little better out of the bottle for some reason.

are you referring to elderberry (sambucus nigra) ?
did you use the flowers to induce fermentation?
I've used it to make elderberry sparkling wine adding yeast. Never tought it could self induce fermentation or at least never trusted the process to be safe enough
@BlurredPixels I didn't use the flowers to induce fermentation (Though you probably could). They went into the wort at the end of the boil to add flavor to the beer. I fermented it with my wild 'Abbey' yeast culture that I harvested from my neighbor's raw honey in 2013 and have been keeping it going since. I called the culture Abbey because it makes flavors somewhat similar to a lot of Belgian strains.

How long do you keep the flowers in ?
@BlurredPixels I put them into the boiling wort right when I turn off the fire and start cooling it so they're steeping in hot wort for only a few minutes

i'd suggest you to try this one.
soak the flowers for 4 -5 days in cold water with some slice of lemon.
No metal container. No yeast.
Run through a sieve.
You will extract the most part of the aroma
Add the flavored water when your wort is cold

@BlurredPixels I've done something similar but added sugar and let it ferment for elderflower champagne. Didn't add it to a beer though. It turned out pretty well.

it's also the same base for syrup
@BlurredPixels I've heard about that but never tried it myself. Maybe next year. I try not to harvest ALL of the flowers because my bees really like them.
