@matthew at 54k years old, Sauron lived long enough to see some human evolution, and probably some similar elf and dwarf evolution too.

Some of it was stuff like extra copies of genes for starch or milk digesting enzymes, but a lot of it was related to sperm production.

Not sure what to make of that. There does seem to be a lot of humans, elves and dwarves around by the time of the stories and very few wizards. 4?

He did at least witness the orks changing/being made from elves to twisted beings of darkness by his master (I can be wrong there, I can't get my brain to read and maintain the old lore). And he did see how his minion Saruman just grabbed a few and made the new versions too.
